Version bump to 1.2.1 (bcc_core.__version__, pyproject, and the stale 1.0.0 in bcc.spec's Info.plist).

Context: the v1.2.0 tag's release run (actions run 167) was cancelled and produced no assets, so nothing after v1.1.0 ever shipped — including the app/window icon fix (#20/#31) the Windows exe has been missing. This release ships:

  • window/taskbar icon + bundled icon assets + AppUserModelID (#20/#31)
  • log viewer, restart button, About/update checker, search/filter, MSIX detection (v1.2.0 feature set)
  • audit fixes #32–#40
  • Windows spawn-test process-tree kill + no console flash (#13)

Also fixes the version-sync test to read pyproject.toml instead of hard-coding the version.

After merge: tag v1.2.1 on main and let release.yml build the three platform assets.
